If you don't have a PDA and you're ready for a full-featured GPS, Anywhere Map has a good log book coupled to its flight timer and planner.
For the Palm PDA's, there's a neat planning program called Co-Pilot. If you set up all the performance/fuel parameters for the plane you plan to fly, then input the forcast winds and direction, plus planned altitude for each leg of your cross country, it will tell you flight time and fuel consumption for each leg as well as the grand total.
Using lat/log coordinates for waypoints and landing strips here in Nicaragua, I can import these destinations into it manually.
